Definition
Kaempferol 3-o-β-d-glucosyl-(1->2)-glucoside is also known as kaempferol-3-O-sophoroside. Kaempferol 3-o-β-d-glucosyl-(1->2)-glucoside is slightly soluble (in water) and a very weakly acidic compound (based on its pKa). Kaempferol 3-o-β-d-glucosyl-(1->2)-glucoside can be found in a number of food items such as macadamia nut, abalone, savoy cabbage, and sago palm, which makes kaempferol 3-o-β-d-glucosyl-(1->2)-glucoside a potential biomarker for the consumption of these food products.
Belongs to the class of organic compounds known as flavonoid-3-o-glycosides. These are phenolic compounds containing a flavonoid moiety which is O-glycosidically linked to carbohydrate moiety at the C3-position.
